This is a Whole Boston Butt that is lightly salted in a coarse kosher salt and then slow smoked roasted over mixed hardwood for ~12 hours. This is cooked in the same manner and at the same time as the pork we process into 1 lb containers.
Your pork will be SHRINK WRAPPED to seal the flavor in!
Here’s a video of the shrink wrap process – which you can see is pretty labor intensive! it’s a great way to lock in the flavor and prolong the time the butt will stay in the freezer.
